Banana Bread Baked Oatmeal

Banana Bread Oatmeal
1 cup rolled oats

1 cup quick cook steel cut oats (you may also just use more rolled oats, I like the texture of both)

4 tablespoon ground flax

2 teaspoon cinnamon

1 teaspoon nutmeg

½ teaspoon ginger

1/2 teaspoon salt

3 teaspoons baking powder


1 cup unsweetened almond milk (you may sub with regular milk here)

1 cup mashed banana (about 3-4 bananas)

2 teaspoons vanilla extract

1-2 tablespoons pure maple syrup

1 cup chopped nuts (walnuts, pecans or chopped almonds)



Preheat oven to 350 degrees.

In a large mixing bowl, add the dry ingredients. Mix together and add wet ingredients one at a time. Chop your choice of walnuts, pecans or almonds and add to the mixture.


Distribute the mixture among 12 muffin tins. Bake for about 15-20 minutes until golden brown.
