Protein Packed Banana Coconut Muffins

I apologize for slacking lately in the recipe department.


But, don’t worry I’m making up for it. Instead of one recipe, you’re getting three (scroll down to find the other two).


Of course there is a reason for that, as I woke up to this horrid image in my kitchen.














When I have bananas that look like this it’s a problem. It was this scene that reminded me of my recipe slacking.


How could I let such a wonderful thing go to waste?


These bananas are at their prime!


I quickly got to work.


Side note.


I have seen people throw bananas away that look like this.


There is nothing more that irks me.


Why would you throw something away in its best state of life?!


Moving on.


I have created protein packed banana coconut muffins. I also prepared one of my favorite versions of baked oatmeal and simple banana nut bread.


There is no reason that brown bananas should ever go to waste. Ever.


They’re like candy but way more nutritious!


If you don’t know what to do with them, I’d gladly take them off your hands.

Protein Packed Banana Coconut Muffins


1 ½ cup oat flour

½ cup quick cook steel cut oats (you can also use rolled oats)

¼ cup coconut sugar

1 teaspoon baking soda

1 teaspoon salt

¼- ½ cup unflavored protein powder (I used Isopure, this can also be omitted)

½ cup unsweetened shredded coconut

1 cup pecans, chopped


½ cup coconut oil

2 eggs

3 bananas, mashed

½ cup Greek yogurt

1 teaspoon almond extract


Preheat oven to 350 degrees.


In a large mixing bowl, add oat flour, steel cut oats, coconut sugar, baking soda, salt, protein powder, coconut and pecans. Mix well.


In a separate bowl, combine coconut oil (melted), eggs, mashed banana, Greek yogurt and almond extract. Slowly add mixture to the dry ingredients. Mix until just combined.


Scoop mixture into muffin tins and bake for 15-20 minutes.
