Simple Banana Nut Bread

 

3 ripe bananas, mashed

6 eggs

1/3 cup coconut oil, melted

1 teaspoon vanilla

1 tablespoon honey

½ teaspoon baking soda

½ teaspoon salt

½ cup coconut flour

1 cup pecans, chopped

 

Preheat oven to 350 degrees.

 

In a large mixing bowl, add eggs, melted coconut oil (make sure it’s not too hot), vanilla and honey. In a separate bowl combine coconut flour, baking soda, salt and chopped pecans.

 

Slowly add dry ingredients to the egg mixture. Do not over mix. Mash bananas and carefully fold into the bread mixture.

 

Scoop mixture into a bread pan and bake for 40-50 minutes until firm to the touch and golden brown.
