Chocolate Date Power Bites

Long ago, I never liked dates. In fact, it’s safe to say, I was actually afraid of them. I think it’s their unappealing appearance. Sticky, brown and very wrinkly…

 

But oh boy was I missing out!

 

Dates have an incredible soft and chewy texture. They’re also extremely sweet which, makes them an awesome substitution for sugar. Dates are very easy to digest, full of dietary fiber, potassium, vitamin A and K, iron, magnesium and niacin. The list goes on but you get the idea.

 

I have been using dates a lot recently as a substitution for sugar. These power bites are one of my favorites! They’re super easy to prepare and make a great snack.

 

They will fool you into thinking you’re eating something very bad…

 

Chocolate Date Power Bites

 

2 cups pitted dates (I used medjool dates)

1 cup almonds

1 cup pecans

½ cup cocoa powder

½ cup unsweetened shredded coconut

½ teaspoon vanilla

small pinch of salt

 

This step is optional, it just adds more flavor to the almonds and pecans. Preheat oven to 300 degrees. On a sheet tray, spread out almonds and pecans. Place in preheated oven and toast until they become fragrant. Be careful not to forget about them, they will burn very easily. Allow them to cool.

 

In a food processor, pulse pitted dates until they become paste like. You might need to soak the dates and then drain them well prior to pulsing. This will make it easier on the food processor! Add pecans, almonds, cocoa power, coconut, vanilla and salt. Pulse for several minutes until everything becomes well combined. Scoop out mixture and roll into 24 balls. Place in the freezer to set them. They can be kept in the refrigerator once set.

 

Think of this recipe as a base! You could add a number of other things including, raisins, oats, flaxseed, hemp seeds, chia seeds, sunflower seeds, pumpkin seeds…the list goes on!
