Austin Inspired Guacamole

Back in June, I had the opportunity to visit Austin, TX with a dear friend of mine.


We had an amazing time! Austin is quite a city.


One of the highlights of our trip was the food. Such good food. In fact, we ended up going to the same Mexican restaurant two nights in a row because the food was so darn good.


Especially the guacamole, it was to die for…


They prepared it in front of the table with all the fresh fixings. Avocado, jalapeño, tomato, red onion, lime juice, salt, pepper, cilantro, hot sauce, cojita cheese and something I thought was a little unusual…pumpkin seeds.


I have never consumed so much guacamole in my life. We couldn’t spoon it into our mouths fast enough!


Upon arriving home, I was craving this incredible guacamole.


This lead to the creation of a recipe inspired by Austin, TX.


I hope you enjoy this as much as I do!


It’s almost as good as Texas…


Austin Inspired Guacamole


6 avocados, ripe

2 roma tomatoes, chopped

1 red onion, chopped

1 jalapeño, chopped

2 limes, juiced

¼ cup cilantro, chopped

2 dashes of hot sauce (I used the Tapatio brand)

¼ cup pumpkin seeds

¼ cup cojita cheese

salt/pepper (DO NOT be afraid of the salt, trust me here)


In a large bowl, remove avocado pit and scoop out the flesh. Lightly mash the avocado. Make sure they are nice and ripe!


Chop tomato, red onion, cilantro and jalapeño. Add to lightly mashed avocados. Juice two limes over the mixture and add hot sauce.


Mash the mixture together well.


Sprinkle in pumpkin seeds and cojita cheese. Note that I did not have cojita cheese on hand when I made this. It is optional but highly recommended J


Finally, add salt and pepper. PLEASE do not be afraid to add a liberal amount of salt here. Salt brings out the flavor of the avocado. It is critical!


Mix well and enjoy!


*I would recommend making this ahead of time and allowing it to sit. They flavors will merry together and it will be even more wonderful.
